Vegan Thanksgiving: World Vegan Vision promotes health and sustainability

World Vegan Vision, led by founders and chairman Malti and HK Shah, hosted a successful Vegan Thanksgiving Celebration on Nov. 17 at Antun’s by Minar in Hicksville, New York.

The event brought together health advocates, plant-based supporters, and community members for a day of learning, gratitude, and delicious vegan food.

Rakesh Bhargava, president of World Vegan Vision’s New York Chapter said, "This event was not just a Thanksgiving celebration; it was a strong reminder of the value of compassion, health, and sustainability."

The highlight was a keynote by Dr. Pritesh Mutha, a top gastroenterologist, who shared insights on “Unlocking Gut Health: A Natural Way to Reverse Diseases.”

He explained that the gut microbiome influences 80 percent of bodily functions, including immunity, digestion, and disease prevention, making gut-friendly choices essential for good health.

Dr. Mutha recommended a high-fiber, plant-based diet, encouraging people to aim for 40 grams of fiber daily and to eat 30 different plants per week, such as fruits, vegetables, grains, and seeds. He also introduced the concept of the Rainbow Diet, urging people to include a variety of colorful, nutrient-rich foods in their meals.

He discussed how avoiding animal products and processed foods can promote gut health and reduce inflammation, and emphasized the negative effects of dairy, suggesting plant-based alternatives like almond, oat, and soy milk.

Dr. Mutha also encouraged lifestyle habits like getting 7-9 hours of sleep each night, exercising daily, and practicing mindfulness techniques, such as meditation, to manage stress. He highlighted the benefits of exposure to nature and soil microbes for diversifying gut bacteria and boosting immunity.
